On our boat, we often have limited ingredients as we don’t want to by the most expensive items at some countries. So These recipes make the most of common ingredients often found onboard or that are easily accessible.
Some tricks we have learned along the way and some processes we always do;
Garlic– always smash with the back of a knife on a flat surface, then peel. Smashing releases the juice and the benefical properties of the garlic.
Pepper– We always use fresh peppercorns and smash them in a mortar for the best flavor. I prefer a stone mortar and pestle and it makes easy task of solid object like peppercorns. Smash to your desired liking.
