Grilled Citrus Chicken
3 cloves garlic, peeled and smashed and chopped
1 Tbsp finely chopped oregano
¼ cup lemon juice
½ cup orange marmalade
2 small red Thai chilies
4 chicken breasts filets
Juice from one orange
Mix all ingredients in a ZipLoc bag and allow flavours to blend and absorb into chicken for as long as you can. Grill chicken on BBQ grill plate or foil to avoid it burning from flames. Brush with reserved marinade a few times while cooking for 15-20 mins.
Sere with mango salsa, Rice, and a green salad with a chilled glass of Pinot Grigio
