Caribbean mac and Cheese

This is a standard side dish in many Caribbean countries, the Virgin islands being one, Bahamas being another. The Cheesy- egg mixture gets its velvety texture from the evaporated milk, When baked and served in squares, is a comfort food that reminds us of our youth.

½ lb cooked elbow macaroni   Macaroni Pie

1 small onion, chopped finely

½ bell pepper

1 ½ cups grated cheddar cheese

½ cup parmesan cheese

2 eggs

salt and pepper

paprika to taste

a splash of hot sauce ( splash depending on how hot the sauce is)

1 ½ cups evaporated milk.

Cook macaroni until el-dente, then add the onion and pepper and cook until veggies are just softened. Drain mixture and return to pot. Add ½ the cheese and stir until melted.   Beat the eggs and mix with hot sauce and seasonings then mix in milk. Add to pot and stir to mix.

Spoon all into a buttered 8 or 9 inch baking dish and sprinkle with remaining cheese evenly. Bake at 350F for about 30 mins and is set, bubbling and brown. Remove from oven, let rest 10 mins or more then cut into squares.
