We really learned to love Conch (pronounced KONK) while in Turks and Caicos Islands, and I remember having it ears ago in Panama as well. It must be well prepared, or you end up with a tough piece of meat. See end of recipe for Conch preparation.
Meat from 1-2 conch
1 small onion, finely chopped,
2 cloves garlic
hot sauce to taste
1 Tbsp Dijon mustard
I tsp baking powder
1 cup flour
milk to make soft dough
salt and cracked pepper to taste
Prepare a shallow pan for deep frying with 1-2 inches of vegetable oil until hot.
Dice conch finely, after preparing it according to our guidelines. Then add to bowl with onion, garlic, hotsauce, egg, and mustard and mix well. Mix flour and baking powder, salt and pepper together well, then add to wet ingredients. Add enough milk or flour to make a soft dough.
Using two spoons, spoon a1 inch ball of dough into hot oil. Cook until browned on one side, then flip over and brown all around. Make sure oil is not too hot, or it will darken them before the conch is cooked thru.
Spoon onto Paper towel lined plate to drain. Serve warm with dipping sauces.
Starting with cleaned fresh Conch, lay on cutting board and slice thinly horizontally into 3 pieces. Using back of knife on wooden cutting board, hammer one piece at a time until consistancey changes to a softer piece of meat Maybe 10 mins? Cut for desired use.
NautiKel Ceviche- A favorite of our friends
White fish cut into tiny bite size pieces, use Dorado, Kingfish, Wahoo, or other similar firm white.
One medium/large white onion,
a few stalks green onion, one bell pepper, julienned,
one hot Thai Chili pepper chopped finely,
Juice from as many limes as you can spare 5-6, 8?,
2 cloves garlic, smashed, then chopped finely,
6 peppercorns, smashed
A few Tbsp EV Olive Oil
The amounts of the ingredients really depend on who much you want to make. For a large serving to share with 6-8 guests, use about 2 cups of fish, then double the remaining ingredients. For smaller portions, use your judgment on your own personal taste. Add shrimp If you can find it economically.
Combine all ingredients in a plastic container with a lid and allow the lime juice to do its magic on the fish, it will “cook” it after a few hours.
Serve with crackers of you choice and margaritas or chilled white wine.
BBQ Whole Fish
Score fish on both sides thru the thickest part
Push rosemary and garlic cloves ( peeled and smashed) into cutsand fill cavity with lemon slices.
Place fish on lemon slices on a long piece of baking foil, top with remaining lemon slices and wrap foil tightly.
Cook fish on heated BBQ grill plate for 20 mins, turn cook another 20
Serve with Vegetable parcels
